Intro to Chocolate - November

L’École Brooklyn is delighted to offer our first ever Introduction to Chocolate class. Designed for novice professionals with a desire to dive deeper into the subject of chocolate, this class will combine classroom work with practical kitchen time. Topics covered will include the history and origin of chocolate, sourcing and production methods. In the kitchen, you will have the opportunity to prepare classic dishes using chocolate such as éclairs, chocolate tart, chocolate mousse cake and macarons. You will also learn the basics of tempering and prepare several different chocolate confections for you to take home.
